I would like to obtain the coefficients of the Policy and Transition Functions as a function of general model parameters. Is there a way to do this in Dynare?

Do you mean you want to get the closed form of the policy function? If that is , I do not think dynare can. Because dyanre gets the policy function by solving the expectation function system, but usually the system can only be solved numerically. It is impossible to get the closed form.
